This thesis deals with the yeast of the genus Saccharomyces, including its origin and history of use. Saccharomyces genus originated probably from Kluyveromyces genus, as well as new species of genus are originated probably by the hybridisation process. Bakalářská práce se věnuje kvasinkám rodu Saccharomyces včetně jejich původu a historie využívání. Rod Saccharomyces pravděpodobně vznikl z rodu Kluyveromyces, nové druhy v rámci rodu potom pravděpodobně procesem hybridizace.
