The effect of defoliation of the grapes zone on the quality parameters of harvested grapes

Abstract:

Diplomová práce se zabývá problematikou zelených prací, speciálně pak odlistěním zóny hroznů v různých termínech a jejím dopadem na kvalitativní a kvantitativní parametry sbíraných hroznů. Byl sestaven dvou letý pokus na odrůdách Sauvignon a Cabernet Sauvignon. Návrh pracoval s dvěma termíny odlistění, které měly mít pozitivní dopad na hodnotu cukernatosti a kyselin. Brzké odlistění ve fázi hrachu (BBCH 75) označováno jako Varianta D a pozdní odlistění ve fázi zaměkání označováno jako Varianta P. V prvním roce experimentu se prováděla měření pouze na odrůdě Sauvignon. Ve druhém roce se pokus rozšířil. Přidala se další odrůda Cabernet Sauvignon. U Sauvignonu se experiment také rozšířil a začal se zkoumat rozdíl mezi klony. Data se vyhodnocovala ze dvou ročníků, takže se porovnávaly i ročníky. V posledním ročníku se vyrobilo ze všech zkoumaných variant víno a hodnotily se senzorické vlastnosti. Sledovala se především cukernatost, titrovatelné kyseliny, pH a asimilovatelný dusík. U uvologických faktorů hmotnost hroznu, bobule, slupky, dužiny, peciček, průměr velikosti bobule a celkový výnos. U senzorického hodnocení se posuzovalo aroma Sauvignonu. Vyhodnocení experimentu dopadlo kladně. Varianty s odlistěním v primárních parametrech dopadly podle očekávání. Měly vyšší cukernatost a nižší kyseliny než kontrolní varianty. Výnos se u odlistěných variant zmenšil a snížila se taky hmotnost hroznu a bobule oproti kontrole

Abstract:

The diploma thesis deals with effect of defoliation, especially the separation of the grape zone at different times and its impact on the qualitative and quantitative parameters of the harvested grapes. A two-year experiment was set up on Sauvignon and Cabernet Sauvignon varieties. The design worked with two dates of defoliation, which were expected to have a positive impact on sugar content and acidity values. Early defoliation at the pea stage (BBCH 75) was referred to as Variant D and late defoliation at the veraison stage was referred to as Variant P. In the first year of the experiment, measurements were made only on the Sauvignon variety. In the second year, the experiment was extended. An additional Cabernet Sauvignon variety was added. With Sauvignon, the experiment was also extended and the difference between the clones began to be investigated. The data was evaluated from two vintages, so the vintages were compared. In the last vintage, wine was made from all the variants studied and the sensory characteristics were evaluated. In particular, sugar content, titratable acids, pH and assimilable nitrogen were monitored. For uvological factors, grape weight, berry, skin, pulp, stones, average berry size and total yield were measured. For the sensory evaluation, Sauvignon aroma was assessed. The evaluation of the experiment was positive. Variants with defoliation in the primary parameters performed as expected. They had higher sugar content and lower acidity than the control variants. Yields were lower in the defoliated variants and grape and berry weights were also lower than in the control variant.
