Tato bakalářská práce se zaměřuje na technologické možnosti snižování a zvyšování obsahu kyselin ve víně. Kyseliny, jako klíčové komponenty vína, mají zásadní vliv na jeho organoleptické vlastnosti, stabilitu a celkovou kvalitu.
