Výroba ovocných destilátů v pěstitelských pálenicích

Production of fruit spirits in distillery plants
Abstract:
Cílem práce bylo zpracovat výrobu ovocných destilátů v pěstitelských pálenicích, od výbě-ru ovoce přes kvašení až po vlastní destilaci. Důležitou součásti práce jsou legislativní aspekty výroby pálenek. Poslední kapitola je věnována vybraným druhům destilátů, mezi které patří ovocné pálenky, whisky a vodka.
Abstract:
The subject of this work was to describe the procedure of production of fruit spirits in dis-tillery plants, from the selection of fruits, the fermentation, to the distillation itself. The legislative aspects of the production of the fruit spirits are of the significant part of this work. The last chapter deals with specially selected distillates, including the fruit spirits, whisky and vodka.
