Ensuring safe and balanced nutrition in Southeast Asian countries

Abstract:

Diplomová práce se zabývá alimentárními onemocněními ve vybraných zemích jihovýchodní Asie. Teoretická část práce popisuje bezpečnost potravin a výživovou dostatečnost, se kterými často souvisí jednotlivá alimentární onemocnění. Ta jsou dělena dle původců onemocnění na virová, bakteriální a parazitární. Způsoby nejčastějšího přenosu původce onemocnění, jejich průběh, prevalence a incidence jsou ve třech vybraných zemích jihovýchodní Asie (Malajsie, Thajsko a Myanmar) popsány u následujících onemocnění: z virových onemocnění to jsou rotavirové infekce a hepatitida, z bakteriálních onemocnění jsou to cholera a tyfus a z parazitárních onemocnění to jsou schistosomosa a taeniáza. V práci jsou vymezeny důležité rizikové faktory, které významně ovlivňují výskyt těchto alimentárních onemocnění. Mezi nejzávažnější alimentární onemocnění v jihovýchodní Asii patří tyfus, norovirové infekce a hepatitida A. Za nejúčinnější preventivní opatření jsou považovány vakcinační programy, zlepšená osobní a komunální hygiena a přístup k zdravotně nezávadné vodě.

Abstract:

This thesis deals with alimentary diseases in selected countries of Southeast Asia. The theoretical part of the thesis describes food safety and nutritional sufficiency, which is often related to individual alimentary diseases. They are divided according to the originators of the disease to viral, bacterial and parasitic. The ways of the most common transmission of the disease agent, their progression, prevalence and incidence in the three selected countries of Southeast Asia (Malaysia, Thailand and Myanmar) are described for the following diseases: rotavirus infections and hepatitis, cholera and typhoid, schistosomiasis and taeniasis. Important risk factors that significantly affect the occurrence of these foodborne diseases are defined in the thesis. The most serious foodborne diseases in Southeast Asia are typhoid fever, norovirus infections and hepatitis A. The most effective preventive measures are vaccination programs, improved personal and communal hygiene and access to safe water.
