Food and Gastronomy in the Development of a Locality (region of Krkonoše mountains and the case of Špindlerův Mlýn)

Abstract:

Diplomová práce se zabývá významem jídla a gastronomie v rozvoji regionu Krkonoše, prostřednictvím cestovního ruchu. Popsána je lokalita Krkonoš, konkrétně oblast horského střediska Špindlerův Mlýn. Literární rešerše konceptualizuje pojetí a význam cestovního ruchu, zároveň popíše důležitost gastronomie a potravin, které jsou neodmyslitelně spjaty s cestovním ruchem. Část práce se proto zaměřuje na problematiku symboliky a symbolického interakcionismu, jelikož regionální potraviny symbolizují kulturu a tradice regionu a stávají se tak součástí reklamních kampaní pro turisty. Práce dále popisuje genézi cestovního ruchu jako významného jevu v ekonomické a mimoekonomické sféře. Empirická část práce předkládá analýzu gastronomických zařízení oblasti, nakolik se využívají místní symbolické prvky v restaurační nabídce a zda se tím zvyšuje atraktivita a originalita místní gastronomie. Polo-standardizované dotazníky oslovily provozovatele místních gastronomických zařízení a krátký dotazník i náhodné návštěvníky Špindlerova Mlýna, kteří vyjádří názor na originální tradiční prvky místního kulinářství. Závěr práce vyhodnotí výsledný výzkum, nakolik je jídlo a gastronomie této oblasti významné pro rozvoj cestovního ruchu a jaký to má dopad na rozvoj region.

Abstract:

The diploma thesis discusses the importance of food and gastronomy in the development of tourism within the Krkonoše region. The region of Krkonoše and specifically the mountain resort of Špindlerův Mlýn is described. The literary research investigates the concept and importance of tourism, and how gastronomy and food are inherently associated with the tourist industry. Part of the work focuses on the issue of symbolism and symbolic interactions, and the way in which regional foods can be representative of the culture and traditions of a region and become adopted for promotional campaigns aimed at developing tourism. The thesis describes the escalation of tourism as a significant phenomenon in both economic and non-economic spheres. The empirical part of the thesis presents an analysis of the gastronomic facilities in the region and the use of local symbolic elements in restaurant promotion, and how this impacts on the attractiveness and originality of regional gastronomy. a short questionnaire for casual visitors to Špindlerův Mlýn determines their opinions about the traditional elements of the local culinary industry. The conclusion of the thesis will evaluate the compiled research and discuss how whether traditional food and gastronomy of this region helps to progress regional development and whether it offers the opportunity for application in other areas of tourism.
