Factors influencing the production of biogenic amines in the chosen strains of Lactococcus lactis

Abstract:

Tato práce je zaměřená na dekarboxylázovou aktivitu vybraných bakterií mléčného kvašení rodu Lactococcus. Tyto bakterie se běţně pouţívají v potravinářství, jako součást smetano-vé kultury, přičemţ některé druhy byly označeny za producenty biogenních aminů. Expe-rimentálně byla tvorba těchto toxických látek detekována po kultivaci v aerobním i anae-robním prostředí v ţivných médiích o proměnlivém sloţení NaCl a laktózy. Z výsledků výzkumu vyplývá, ţe všechny námi vybrané bakterie rodu Lactococcus produkují biogenní amin tyramin. Jeho nejvyšší koncentrace byla detekována v anaerobním prostředí při kon-centraci laktózy 0,5% (w/v) a 2% NaCl (w/v).

Abstract:

This thesis is aimed at decarboxylation activity of chosen lactic acid bacteria strains Lacto-coccus. These bacteria are generally used in the food-processing industry as a component of cream culture. Some of them were identified as producers of biogenic amines. Production of these toxic substances was experimentally detected after the cultiva-tion in both aerobic and anaerobic atmosphere in nutrient medium with variable composi-tion of NaCl and lactose. The results imply that all of us selected bacteria strains Lacto-coccus produce biogenic amine tyramine. Its highest concentration wasdetected in an anae-robic atmosphere at a concentration of 0,5% laktose (w/v) and 2% NaCl (w/v).
