Abstract:
Cílem této bakalářské práce bylo vytvořit rešerši na téma fermentované mléčné nápoje. Konkrétně se práce zabývá základní charakteristikou mléka, čistými mlékařskými kulturami, výrobou a jednotlivými druhy fermentovaných mléčných nápojů. Abstract:
The aim of this bachelor´s thesis was to create research on the topic of fermented dairy beverages. Specifically, the thesis deals with the basic characteristics of milk, starter cultures, production and individual types of fermented dairy beverages.
