Study of redox reactions in grape must and wine

Abstract:

V první kapitole literárního přehledu je snahou rozdělit složky přítomné ve víně do skupin, charakteristických konkrétní chemickou strukturou. Jejich nejvýznamnější zástupci jsou zde obecně rozebíráni po stránkách molekulární stavby, koncentrační úrovně, funkce či reaktivity. Druhá část zaměřuje svou pozornost na definici oxidačně-redukčních reakcí v návaznosti na pre-fermentační (mošt) a post-fermentační fázi (víno), kdy je v úvodu každé nejprve diskutován vliv prostředí. V moštovém stádiu je největší část věnována enzymaticky zprostředkované oxidaci, v níž jsou zahrnuty konkrétní typy účastnících se enzymů, substráty podléhající redoxním přeměnám, výsledné produkty, či role sloučenin s antioxidační aktivitou. U dokvašeného vína je posléze rozebírán mechanismus neenzymatické (chemické) oxidace, jejíž princip je založen na vzniku radikálových forem kyslíku se schopností oxidovat různé typy substancí. Stejně jako u enzymatické oxidace je zahrnuta funkce antioxidantů. Třetí část se pokouší vyjádřit význam redukce a oxidace ve slova smyslu přijímaném většinovou částí vinařského odvětví a odborné veřejnosti. Uplatňován je přístup rozdělující uvedené pojmy na dva samostatné soubory, ke kterým jsou přiřazeny látky s příznačným principem vzniku. Složky působící senzoricky reduktivním vjemem jsou prezentovány skupinou těkavých sloučenin síry (VSC). Mezi oxidativně vnímané náleží prioritně acetaldehyd a kyselina glyoxalová. Poslední kapitola sumarizuje aktuálně nejpoužívanější metody pro přímé a nepřímé pozorování redoxních reakcí v návaznosti na specifičnost daných podmínek. Největší část je zde věnována analýze hodnoty EH (mV) za pomocí redoxních elektrod. V dalších odstavcích jsou následně uváděny nepřímé metody, jejichž výsledkem je hmotnostní koncentrace rozpuštěného diatomického kyslíku, nebo sloučenin zasahujících do průběhu redoxních přeměn.

Abstract:

In the first chapter of the literature review, an attempt is made to divide the components present in wine into groups characterized by a specific chemical structure. Their most important representatives are generally analyzed here in terms of molecular structure, concentration level, function or reactivity. The second part focuses its attention on the definition of oxidation-reduction reactions following the pre-fermentation (must) and post-fermentation phase (wine), when the influence of the environment is first discussed in the introduction of each. In the must stage, the largest part is devoted to enzymatically mediated oxidation, which includes specific types of participating enzymes, substrates subject to redox transformations, resulting products or the role of compounds with antioxidant activity. The mechanism of non-enzymatic (chemical) oxidation is then analyzed for post-fermented wine, the principle of which is based on the formation of radical forms of oxygen with the ability to oxidize various types of substances. As with enzymatic oxidation, the function of antioxidants is involved. The third part attempts to express the meaning of reduction and oxidation in the sense of the word accepted by the majority of the wine industry and professional public. An approach is applied that divides the mentioned terms into two separate sets, to which substances with a characteristic principle of formation are assigned. Components with a sensory reductive effect are presented by the group of volatile sulfur compounds (VSC). Acetaldehyde and glyoxalic acid are prioritized among oxidatively perceived ones. The last chapter summarizes the currently most used methods for direct and indirect observation of redox reactions based on the specificity of the given conditions. The largest part here is devoted to the analysis of the EH value (mV), with the help of redox electrodes. In the next paragraphs, indirect methods are subsequently presented, the result of which is the mass concentration of dissolved diatomic oxygen or compounds interfering with the course of redox transformations.
