Creation Project of Quality Management System according to the Standard ČSN EN ISO 9001: 2001

Abstract:

Diplomová práce je napsána s cílem vytvoření návrhu aplikace systému managementu kvality pro organizace zabývající se stravovacími službami obsahující ucelený přehled a popis jednotlivých činností při zavádění systému managementu kvality dle normy ČSN EN ISO 9001:2001. Aplikací organizace získá zdokumentování a popsání veškerých procesů a v neposlední radě systémový přístup ve všech činnostech organizace. Přínosem této práce je ucelený pohled na problematiku kvality ve stravování, porovnání přínosu managementu kvality s obavami, které z jeho zavedení plynou a na tomto základě učinění rozhodnutí zda v organizaci provést certifikaci systému managementu kvality dle normy ČSN EN ISO 9001:2001 či nikoliv. Analýza nejčastějších problémů se zaváděním a zhodnocení přínosu zavedení systému managementu kvality je dalším cílem diplomové práce. Teoreticko-metodologická část diplomové práce se zabývá přístupy k řízení jakosti a vymezením norem řady 9000 a normy ČSN EN ISO 9001:2001. Aplikační část obsahuje návrhy pro dosažení kvality ve výrobě pokrmů pomocí systému managementu kvality dle normy ČSN EN ISO 9001:2001.

Abstract:

The goal of the thesis is to create the concept of the quality management system applied for organizations that are engaged in food services. The thesis contains a comprehensive outline and description of singular operations during an implementation of quality management system according to the standard ČSN EN ISO 9001:2001. The application provides a documentation and description of all processes for an organization and a systemic access in all activities of the organization. The goal of this thesis is a comprehensive look at the problems with quality in food services, the comparison of the benefits of the quality management with fears that come with its implementation and thus making a decision whether execute a certification of the quality management system in and organization according to the standard ČSN EN ISO 9001:2001 or not. The analysis of the most frequent problems adherent to the implementation and evaluation of the contribution of implementation of the quality management system is another goal of the thesis. Theoretical and methodological part of the thesis is concerned with the approach to quality management and delimitation of the 9000 line standard and the standard ČSN EN ISO 9001:2001. Application part includes a project for achieve a production of quality foods according to the standard ČSN EN ISO 9001:2001.
