Alternative gastronomy
Abstract:
The dissertation deals with the issue of alternative eating. It clarifies its basic forms, points to these forms as a trend in gastronomy and explains the basic reasons for moving to one of the alternative directions in diet. Consumers' interest in gastronomic establishments with one of these directions and their success in the Czech Republic are also surveyed.

Diplomová práca sa venuje problematike alternatívneho stravovania. Objasňuje jeho základné formy, poukazuje na tieto formy ako na trend v gastronómií a vysvetľuje základné dôvody prechodu na jeden z alternatívnych smerov v stravovaní. Zisťovaný je tiež záujem spotrebiteľov o gastronomické zariadenia s jedným z týchto smerov stravovania a ich úspešnosť v Českej republike.
