Reducing Food Waste in Retail

Abstract:

Bakalářská práce se zabývá snižováním potravinového odpadu v retailu. Cílem této práce je na základě analýzy dostupných dat identifikovat, jaké existují iniciativy ohledně snižování potravinového odpadu ve světě, a pokusit se navrhnout podobné iniciativy u nás za podpory vládních institucí a organizací. Práce je rozdělená na teoretickou a praktickou část. Teoretická část přibližuje danou problematiku a popisuje, jak se snižuje a vykazuje potravinový odpad v retailu. Praktická část identifikuje iniciativy ve světě a popisuje způsoby snižování a vykazování potravinového odpadu u 7 největších potravinových firem u nás: Lidl, Tesco, Albert, Billa, Kaufland, Globus a Penny. Dále oslovuje firmy s cílem zjistit, jestli mají zájem o společnou iniciativu a jakou. Závěrem je na základě provedené analýzy a získaných odpovědí navrhnuta iniciativa zaměřená na osvětu zákazníků.

Abstract:

The thesis investigates and analyses the attempts of reduction of food waste in retail. The main focus of this work is the analysis of publicly available data to help identify what initiatives are taken up in an attempt to reduce food wastage around the world. The next intent of this thesis is to try to devise similar initiatives in Czechia, with the support of government institutions and organizations. This study is divided into theoretical and practical part. The theoretical part approaches the issue and analyses how food waste is reduced and reported in retail. The practical part outlines initiatives already in progress around the world and describes methods used to reduce food waste, and the way it is reported in the 7 largest food companies in Czechia: Lidl, Tesco, Albert, Billa, Kaufland, Globus and Penny. This part of the study also addresses companies to find out if they would be interested in a joint initiative, and which one. As a final part of this research paper, an analysis of obtained answers is performed, as well as, a proposal of an initiative focused on educating customers.
