Abstract:
Cílem bakalářské práce bylo shrnout základní taxonomické, technologické a nutriční charakteristiky o rostlině Ilex paraguariensis a o nápoji yerba mate, který se z ní připravuje. Cílem praktické části bylo připravit vodné výluhy yerba mate v závislosti na teplotě a v nich stanovit obsah xanthinových derivátů a minerálních prvků za pomoci HPLC a ICP-MS. Abstract:
The aim of the bachelor thesis was to sum up basic taxonomic, technological and nutritional characteristics of Ilex paraguariensis plant and yerba mate infusion, which is prepared out of this plant. The aim of the practical part was to prepare aqueous solutions of yerba mate depending on the temperature and to analyze xanthine derivates and mineral compounds contents using HPLC and ICP-MS.
