Alternatives of barrique barrels during winemaking

Abstract:

Vzhledem k vysokým cenám barikových sudů a vín, která v nich zrála, byly vytvořeny alternativy daných sudů. Díky nižším výrobním a přepravním nákladům má i víno samotné s použitím dubových barikových náhražek nižší cenu. Vinař je schopen si vybrat ze široké nabídky tvarového provedení dubových alternativ, různých stupňů toastování, délkou kontaktu s vínem a několika druhů dubů, ze kterých jsou vyrobeny. Tato práce se zabývala sudy typu barrique a převážně jejich alternativami a použitím. Experimentální část je zaměřena na výrobu dubové náhražky a její aplikaci do vína. Byl zkoumán vliv daného substituentu na víno z hlediska antioxidační aktivity a víno bylo senzoricky zhodnoceno. Množství antioxidantů ve víně prokazatelně stouplo po přidání dubové alternativy, ve většině případů. Už po přidání malého množství náhražky byl pozorován senzorický rozdíl vůči čistému vínu.

Abstract:

Due to the high prices of barrique barrels and the wines that are matured in them, some alternatives of these barrels were created. Thanks to lower production and transport costs, even the wine itself has a lower price with the use of oak barrel substitutes. The winemaker can choose from a wide range of oak alternatives, different degrees of toasting, length of contact with the wine and several types of oak from which they are made. This work dealt with barrique barrels and mainly their alternatives and uses. The experimental part is focused on the production of oak substitute and its application in wine. The influence of the given substituent on the wine was investigated in terms of antioxidant activity and the wine was evaluated sensorially. The amount of antioxidants in the wine has been shown to increase after the addition of the oak alternative, in most cases. Even after the addition of a small amount of the substitute, a sensory difference to the pure wine was observed.
