Plant-based beverages in human nutrition and their use in food preparation

Abstract:

Předložená bakalářská práce se zabývá problematikou stále více používanějších rostlinných alternativ kravského mléka. Teoretická část se věnuje jednotlivým druhům, nutričním hodnotám a složení rostlinných nápojů. Zároveň informuje o rozdílech od kravského mléka a výskytu antinutričních látek. Je zde také popisována jednoduchá domácí výroba rostlinného nápoje, která s sebou přináší spoustu výhod na rozdíl od kupovaných rostlinných nápojů. V praktické části je přichystáno a připraveno 8 receptur pokrmů, kde jsou využity různé druhy rostlinných nápojů. Postup přípravy receptů je po celou dobu fotodokumentován. U receptur pokrmů jsou poté přepočítány nutriční hodnoty a srovnány s pokrmem, kde je místo rostlinného nápoje použito kravské mléko.

Abstract:

The presented bachelor thesis deals with the issue of increasingly used plant-based alternatives to cow's milk. The theoretical part is devoted to the different types, nutritional values and composition of plant-based beverages. At the same time it informs about the differences from cow's milk and the occurrence of anti-nutritional substances. It also describes the simple home production of a plant-based beverages, which brings with it many advantages in contrast to bought plant drinks. In the practical part, were preparated 8 recipes which using different types of plant-based beverages. The process of preparing the recipes was photodocumented throughout. The nutritional values of the recipes were then recalculated and compared with a dish where cow's milk was used instead of a plant-based beverages.
