Innovative study material for teaching beermanism

Abstract:

Bakalářská práce se zabývá problematikou beermanství jako součásti výukových materiálů pro studenty středních škol zaměřených na potravinářský průmysl České republiky. Její výsledky by měly napomoci inovaci studijních materiálů a podpořit výuku tohoto nového, specifického oboru nejen v pivovarnictví, které má v naší zemi mnoha set letou tradici, ale také v pivoznalství, včetně podávání tohoto nápoje hostům. Teoretická část přináší podstatné definice a názvosloví spojené s výrobou piva v českých zemích a praktická část je zaměřena na novodobé poznatky a technologie při výrobě piva, jeho stáčení a plnění do přepravních tanků, sudů a lahví, včetně expedice. Objevují se zde moderní trendy a směry, které do výroby piva přišly teprve na počátku nového tisíciletí, jak o nich vypovídali odborníci zaměření nejen na výrobu tradičního nápoje, ale i na jeho kvalitu, chuťové rozdíly způsobené různými kvasnými postupy a podávání hostům. Výukové listy jsou výsledným produktem, které mají sloužit jak žákům tohoto oboru, tak jejich pedagogům. Cílem práce je vytvoření výukových materiálů (pracovních listů) pro výuku beermanství. Pracovní listy by měly zkvalitnit a také zatraktivnit výuku a žáky motivovat k aktivní účasti při vzdělávání. PL pomohou pedagogům při vedení výuky z hlediska syntézy teorie a praxe.

Abstract:

The bachelor thesis deals with the issue of beermanism as a part of teaching materials for secondary school students focused on the food industry of the Czech Republic. Its results should help to innovate study materials and support the teaching of this new, specific field not only in the brewing industry, which has many hundred years of tradition in our country, but also in brewing, including serving this drink to guests. The theoretical part brings substantial definitions and terminology connected with beer production in the Czech lands and the practical part is focused on modern knowledge and technologies in beer production, bottling and filling into transport tanks, barrels and bottles, including expedition. There are modern trends and trends that have come to the production of beer at the beginning of the new millennium, as experts focused not only on the production of traditional beverages but also on the quality, taste differences caused by various fermentation processes and serving guests. Educational sheets are the final product to serve both pupils in this field and their teachers. The aim of this work is to create teaching materials (worksheets) for teaching beermanism. Worksheets (PL) should improve and also make teaching more attractive and motivate pupils to participate actively in education. PL will help educators to guide teaching in terms of synthesis of theory and practice.
