Possibilities of rye yeast preparation for the production of rye spirit

Abstract:

V diplomová práci na téma „Možnosti přípravy žitných kvasů pro výrobu žitné pálenky“ byla zpracována literární rešerše na téma žito, výroba žitné pálenky a procesy spojené s výrobou. V literární rešerži jsem se především zaměřila na popsání chemického a morfologického složení žitného zrna. Následně byly popsány suroviny pro výrobu žitné pálenky a popsán technologický postup získávání výsledných destilátů. V technologickém postupu byla také zahrnuta enzymatická katalýza, při které dochází k rozkladu matrice obiloviny na jednotlivé komponenty. V praktické části diplomové práce proběhla výroba sladkých zápar. Bylo vyrobeno několik variant, které byly rozdílně připravené. Proběhlo rozdílné přidání enzymů, přidání rozdílného množství ječného sladu, zeleného ječného sladu nebo naopak úprava vzorků s přidáním pouze sladů, které prošli hvozděním při různých teplotách. Vzniklé zápary byly fermentovány a destilovány. Ze získaných destilátů proběhlo pyknometrické stanovení lihovitosti, vypočítána výsledná výtěžnost destilátů a stanovené skutečné procento maximálního možného teoretického výtěžku. Stanovená výtěžnost byla porovnána ku skutečnému procentu maximálního výtěžku a zhodnocena, zda by se pro zpracovatele škrobnatých surovin zaměřené na žito vyplatilo použití různých možností.

Abstract:

The diploma thesis on a topic of „Possibilities of rye yeast preparation for the production of rye spirit“ covered literature review on rye, production of rye spirit and processes linked with the production. I particularly focused on describing chemical and morphological composition of rye grain. Ingredients for production of rye spirit and technological process of obtaining the resulting distillates were described afterwards. Technological process review includes enzymatic catalysis, in which the matrix of the cereal decomposes into individual component. In the practical part of this diploma thesis a production of sweet mash. Several samples were made, each one prepared differently. The samples were adjusted by adding different enzymes, different amounts of barley malt and green barley malt or by adding malts which have undergone germination at different temperatures. The resulting mash was fermented and distilled. A pycnometric determination of spirits was performed on the obtained distillates and the final yield of the distillates was calculated just as the actual percentage of the possible maximum theoretical yield. The final yield was compared to the actual percentage of the maximum yield evaluating whether using different options would be worthwhile for rye processors.
