Nutritional evaluation of the production of a selected meat product with a reformulated recipe

Abstract:

Diplomová práce se věnuje nutričnímu vyhodnocení výroby vybraného masného výrobku s reformulovanou recepturou. Na začátku práce popisuje roli jednotlivých makronutrientů a mikronutrientů v lidské výživě. Zabývá se problematikou masa ve vztahu ke kardiovaskulárním onemocněním. Uvádí charakteristiku rostlinných a živočišných zdrojů lipidů. Dále popisuje reformulace zaměřené na změnu složení tuku v masných výrobcích. Poté popisuje různé trendy v reformulacích masných výrobků. Praktická část diplomové práce uvádí výrobu a recepturu masných výrobků, pro kterou byly použity oleje řepkový, lněný, ostropestřecový a rybí jako náhrada tradičního vepřového sádla. U experimentálních vzorků proběhlo stanovení obsahu tuku a profilu mastných kyselin, stanovení indexů aterogenity a indexu trombogenity. Lněný olej, rybí a řepkový byly z nutričního a zdravotního hlediska nejvhodnější náhradou vepřového tuku v boloňských salámech.

Abstract:

The diploma thesis deals with the nutritional evaluation of the production of a selected meat product with a reformulated recipe. The introduction describes the role of individual macronutrients and micronutrients in human nutrition. It deals with the issue of meat in relation to cardiovascular diseases. It represents the characteristics of plant and animal sources of lipids. It also describes reformulations aimed at changing the composition of fat in meat products. It then describes various trends in the reformulation of meat products. The practical part of the diploma thesis presents the production and recipe of meat products, for which rapeseed, flax, milk thistle and fish oil were used as a substitute for traditional lard. The fat content and fatty acid profile of the experimental samples were determined, the atherogenicity indices and the thrombogenicity index were determined. Flaxseed oil, fish and canola were the most nutritionally and health-replaceable substitutes for pork fat in Bologna salami.
