Abstract:

Abstrakt PONJIGER, Sanja. Ekologie v oblasti hotelnictví a gastronomie. [Bakalářská práce] Vysoká škola hotelová v Praze 8, spol. s. r. o. Praha: 2018. 45 stran. Jeden z větších znečišťovatelů životního prostředí a spotřebitelů energie je hotelový a restaurační provoz. Hotely spotřebovávají nejvíce energie na jednoho návštěvníka, protože mají energeticky náročné zařízení a služby, jako jsou restaurace, bary, bazény, prádelny atd. V této bakalářské práci zpracovávám téma ekologie a její začlenění do řízení hotelů a restaurací. Cílem této práce je zhodnotit ekologické chování hotelů a restaurací a také návrh uplatňování většího množství ekologických prvků. Dále si klade za cíl upozornit na přínosy odpovědnosti vůči životnímu prostředí a využívaní obnovitelných zdrojů. Zdůrazňuje nutnost, aby se hotelnictví a gastronomie vyvíjely v souladu s konceptem trvale udržitelného rozvoje cestovního ruchu, jinak samotný cestovní ruch, jako sociální jev, bude ohrožen v důsledku nevratných škodlivých účinků na životní prostředí, které již tato hospodářská činnost způsobila. K dosažení cíle práce byly použity tyto metody: dotazníkové šetření, sekundární analýza, literární rešerše.

Abstrakt PONJIGER, Sanja. Ecology in hospitality and gastronomy. [Bachelor´s Dissertation] The Institute of Hospitality Management in Prague 8, Ltd. Prague: 2018. 45 pages. Two of the major environmental pollutors and energy consumers are hotel and restaurant operations. The highest energy consumption per visitor is held by hotels due to the energy-intensive devices and services, such as restaurants, bars, pools, laundries etc. This bachelor thesis deals with the theme of ecology and its integration into the management of hotels and restaurants. The aim of this work is to evaluate ecological behavior of hotels and restaurants and also to propose application of the ecological elements in greater quantities. This thesis also seeks to call to attention the contribution of responsibility towards the environment and the use of renewable energy sources. It accentuates the necessity of hotel business and gastronomy to evolve in accordance with the concept of sustainable development of tourism. Otherwise, tourism as a social phenomenon will be consequentially threatened due to harmful effects on the environment caused by abovementioned economic activity For achieving the objectives the following methods have been used: a questionnaire surveying, secondary analysis and literary research.
