Management of Ordering Goods with a Limited Shelf Life

Abstract:

Tato disertační práce se zaměřuje na problematiku řízení objednávek zboží s omezenou dobou trvanlivosti, konkrétně na běžné pečivo v maloobchodních řetězcích. Nejdříve je zpracována literární rešerše zkoumané problematiky, jež se zaměřuje na specifika logistických řetězců v potravinářském průmyslu a řízení zásob v podnicích. Hlavním obsahem disertační práce je navržení, sestavení a aplikace metodiky pro objednávání rychlezkazitelného zboží, konkrétně běžného pečiva, na úrovni maloobchodních řetězců v České republice s využitím fuzzy logiky.

Abstract:

This dissertation thesis focuses on the management of the ordering goods with a limited shelf life, especially common pastry in retail chains. The literary research is processed firstly, it focuses on the specifics of the logistics chains in the food industry and inventory management in companies. The main content of the dissertation thesis is to design, to create and to apply the methodology for ordering perishables goods, especially the common pastry, on the level of the retail chains in the Czech Republic using fuzzy logic.
