Tato diplomová práce je zaměřena na problematiku stanovení antioxidační aktivity ve fermentovaných mléčných výrobcích. Literární část je zaměřena na definici antioxidantů, jejich rozdělení a význam jak v potravinářství, tak v lidském organismu. This diploma thesis is focused on the issue of determining antioxidant activity in fermented dairy products. The literary part is focused on the definition of antioxidants, their classification and importance both in the food industry and in the human organism.
