V této bakalářské práci studujeme závislost koncentrace isoflavonoidů na době zrání jogurtu. Isoflavony jsou látky rostlinného původu, strukturně podobné 17-β-estradiolu, s pozitivními účinky na zdraví. Teoretická část je věnována fytoestrogenům, mezi něž se isoflavony řadí. Abstract:
In this thesis we study dependence of concentration of isoflavonoids on time of maturation. Isoflavones and equol are substances of plant origin, which are structurally similar to 17-β-estradiol and are benefical for human.
