The application of performance standards within the food industry

Abstract:

Cílem bakalářské práce je analýza stávajícího stavu použití výkonových norem ve vybraném podniku Mlékárna Hlinsko. V práci bude zjištěn aktuální stav a následně navrhnutá nová struktura a způsob pro výpočet technicko-výkonových norem. Vybraná metoda pro výpočet bude použitá na třech vybraných produktech. Výsledkem je reporting, díky kterému je mlé-kárna schopna kontrolovat plnění výkonových norem a díky kterému je schopna vytvořit alo-kační klíč pro nepřímé náklady. Návrh a optimalizace výkonových norem usnadní kontrolu výroby a minimalizuje výrobní náklady a zároveň pomohou v plánování výroby, lidských zdrojů a v navázání na kapacitní propočty obchodního plánu. Použitá metoda se podle mlé-kárny řídila kapacitou linky. Přínos pro mlékárnu je veliký. Po aplikaci je schopna sledovat mnoho ukazatelů, jakými jsou vícepráce a prostoje. Tyto ukazatele jsou propojeny s informačním systémem tak, že je poté snazší najít místo vzniku daného problému. Na zákla-dě toho má mlékárna možnost snažit se eliminovat příčiny těchto negativně se projevujících ukazatelů.

Abstract:

The work will focus on the analysis of the current state of the use of performance standards in selected company Dairy Hlinsko. The work will be structured so as to define and analyze the current situation regarding the usage of performance standards and then to design a new structure and a method for calculating the technical and performance standards. The selected method of calculation should be applied to three selected products. The resulting reporting allows the dairy to monitor the implementation of performance standards and enables it to produce allocation key for indirect costs. The design and optimization of performance stan-dards to facilitate the control of production and minimizes production costs and supports pro-duction planning, human resources and capacity calculations to establish the business plan. The method used by the dairy controlled link capacity. The benefit for the dairy is significant. Following the application, the dairy is able to monitor many indicators, such as rework and downtime. These indicators are linked to the information system so that it is then easier to find the point of origin of the problem. On the basis of this information, the dairy is equipped to try to eliminate the causes of these negative indicators.
