Influence of the new method of pruning grapevine on grapes yield and quality

Abstract:

Tato diplomová práce se zabývá problematikou vlivu nového způsobu řezu révy vinné na výnos a kvalitu hroznů, dále porovnáváním pracovní náročnosti ve vztahu k tradičnímu rýnsko-hessenskému vedení, založení pokusu s novým způsobem řezu révy vinné a vyhodnocením kvalitativních a kvantitativních parametrů sklizně s následnou výrobou a senzorickým ohodnocením dvou vín, která byla vytvořena stejnou technologii, ale hrozny pocházely z různých vinic s různým sponem. V literární části je přiblížena historie pěstování révy vinné, řez révy vinné a vedení révy vinné. V neposlední řadě je zde popsán i nový způsob vedení révy.V experimentální části jsou stručně popsány odrůdy Rulandské šedé a Merlot. Dále následuje popis, průběh a metody výroby vín a soubor analytických a senzorických metod, které byly prováděny. Na závěr jsou zhodnoceny a popsány jednotlivé výsledky experimentu.

Abstract:

This diploma thesis deals with the influence of a new method of grapevine cutting on the yield and quality of the grapes. There is a comparison of work demands in relation to the traditional Rhine - Hessian management and deals with the establishment of an experiment with a new method of grapevine prunning. The thesis evaluates the qualitative and quantitative parameters of the harvest with subsequent production and sensory evaluation of the two wines. These wines were created with the same technology but the grapes come from different vines with different clips. The theoretical part of the thesis is about history of grapevine growing, pruning and management. At the end of this section is describe a new way of grapevine management.The practical part include and describe the varieties Pinot Gris and Merlot. There are described processes and methods of production of wines and files of analytical and sensory methods which were performed. Finally, there are evaluated and described the results of the thesis.
