Possibilities of filtration in the technology of the beverage industry

Abstract:

Filtrace je separační technika, která se neustále rozvíjí a nachází stále víc uplatnění v různých odvětvích průmyslu. Pomocí této separační techniky se z kapalných fází suspenze oddělují pevné částice na základě jejich velikosti. Filtrační techniku můžeme rozdělit podle několika kritérií, které se neustále zdokonalují, aby se zajistily co nejlepší výsledky filtrace ve všech ohledech. Mezi aktuální trendy patří například membránová filtrace, filtrace přes filtrační svíčky na křemelině nebo filtrace přes celulózové materiály. V nápojovém průmyslu se filtrace aplikuje za účelem koncentrace nápojů, oddělování pevných a kapalných složek (tzv. frakcionace) nebo odsolování. Dalším případem, kdy je filtrace využívána, je zajištění mikrobiální stability a hygienické nezávadnosti produktů, a to bez použití vyšších tepelných zásahů. Díky této technologii můžeme dosáhnout i lepších senzorických vlastností nápojů.

Abstract:

Filtration is a separation method, which is constantly evolving and is increasingly used in various industries. Using this separation method, solid particles are separated from the liquid phases of the suspension based on their size. The filtration device can be divided according to several criteria, which are constantly improving to ensure the best possible filtration results in all regards. Current trends include, for example, membrane filtration, filtration through diatomaceous earth filter cartridges, or filtration through cellulosic materials. In the beverage industry, filtration is applied to concentrate beverages, separate solid and liquid components (so-called fractionation) or desalination. Another case in which filtration is utilized is to ensure microbial stability and hygienic safety of the products without the use of higher thermal interventions. Thanks to this technology we can achieve better sensory properties of beverages.
