A study of restaurant operations

Abstract:

Bakalářská práce obsahuje provozní studii restauračního podniku nacházejícího se u dolní stanice LD Svatý Petr ve Špindlerově Mlýně. Práce je rozdělena na teoretickou část, praktickou část a návrhovou část. Teoretická část se zabývá hostinskou živností, jejímu právnímu vymezení, podmínkám jejího provozování a s provozováním restauračního zařízení souvisejícími otázkami legislativy stravovací služby a požadavky na hygienická opatření dle vyhlášky č. 137/2004 Sb. Dále se práce ve své teoretické části zabývá podrobněji kategorizací hostinských zařízení, EET a jejího fungování, finanční situací firmy, která je zjišťována pomocí nástrojů jako je například finanční analýza. Food trendy zakončují teoretickou část této práce. V praktické části autor popisuje provoz skutečně existující restaurace před rozsáhlou rekonstrukcí a po ní. Rozebírá vliv rekonstrukce na KPI ukazatele a provádí finanční analýzu provozu restaurace porovnávající výsledky z minulých let a predikci tržeb v sezónách 2019 a 2020, rentabilitu tržeb a rentabilitu nákladů. Na konci práce, v návrhové části autor doporučuje, aby se management restaurace zaměřil na konkrétní skladbu nákladových skupin za účelem optimalizace nákladů a zvýšení ziskové části z tržeb.

Abstract:

The Bachelor’s Dissertation contains an operational study of the restaurant located at the valley station of the ski chairlift Svatý Petr in Špindlerův mlýn. The work is divided into theoretical part, practical part and improvement proposal part. The theoretical part deals with the restaurant operation business, its legal definition, the conditions of its operation, the questions related to the operation of restaurant facilities and requirements for sanitary measures according to Decree No. 137/2004 Sb. Furthermore, the work in its theoretical part deals with in more detail by categorization of the food and drink serving facilities, EET and its characteristics, financial situation of the company which is detected by the various instruments such as for example financial analysis. Food trends finalize the theoretical part of this theses. In its practical part, the author describes the operation of a really existing restaurant before and after an extensive reconstruction. It analyzes the impact of the reconstruction on KPI indicators and performs a financial analysis of the restaurant operation comparing the results of previous years and the prediction of sales in the 2019 and 2020 seasons, profitability of sales and cost-effectiveness. At the end of the work, in the improvement proposal part, the author recommends that the management of the restaurant should focus on the specific composition of cost groups in order to optimise the overall costs and increase the profitable part from sales.
