Tato práce se zabývá analýzou umělých sladidel v potravinách. Teoretická část obsahuje charakterizaci sacharidů, umělých sladidel a jejich zdravotní rizika. This work deals with the analysis of artificial sweeteners in food. The theoretical part contains the characterization of carbohydrates, artificial sweeteners and their health risks. Subsequently, selected artificial sweeteners and their alternatives are described.
