L-glutamic acid salts and their possible side effects on the human body

Abstract:

Soli L-glutamové kyseliny pro svou jedinečnou schopnost zlepšovat chuť pokrmů nabyly za poslední roky na popularitě. S rozšiřováním těchto přídatných látek do kuchyní po celém světě se začaly rozšiřovat i informace o jejich možné a dosti závažné toxicitě na lidský organismus. Bakalářská práce je založena na rešerši z převážně zahraniční odborné literatury, jejíž cílem je představit problematiku glutamátů. Popisuje historické pozadí objevu kyseliny L-glutamové jakožto chuťové modality, stručně vysvětluje koncept aditivních látek a fyziologický význam glutamové kyseliny. Následuje část věnovaná výčtu jednotlivých glutamátových aditiv, jaké receptory zprostředkovávají jejich percepci a jak se vyrábí. Stěžejní pasáží je pak posouzení nežádoucích účinků, plynoucí z nadměrné konzumace potravin bohatých na glutamáty.

Abstract:

L-glutamic acid salts have gained popularity in recent years due to their unique ability to improve the taste of the food. With the spread of these food additives to kitchens around the world, information about their possible and quite serious toxicity to the human body have begun to spread. The bachelor thesis is based on a review of mostly foreign scientific articles, which aims to introduce the issue of the glutamates. It describes the historical background of the discovery of L-glutamic acid as a taste modality, briefly explains the concept of food additives and the physiological importance of glutamic acid. The following section is devoted to the list of individual glutamate additives, which receptors mediate their perception and how they are produced. The key passage is the assessment of the side effects resulting from excessive consumption of foods rich in glutamates.
