Abstract:
Bakalářská práce se zabývá biopotravinami v cukrářství. Biopotraviny jsou aktuálním trendem v gastronomii a zároveň mají pozitivní dopad na životní prostředí. Cíl bakalářské práce je zjistit, jak hojně jsou v cukrářské výrobě používané biopotraviny a zda, případně jakým způsobem, ovlivňují finální produkt a poptávku po produktu. The bachelor thesis deals with organic food in the confectionery. Organic food is a current trend in gastronomy and at the same time has a positive impact on the environment.
