Gastronomic services in the selected location

Abstract:

Hlavním cílem diplomové práce je poskytnout přehled o gastronomických službách ve vybrané lokalitě (Praha 12) a poukázat na úroveň poskytovaných služeb. Vedlejším cílem diplomové práce je navrhnout vhodná opatření pro rozvoj těchto služeb. Informace uvedené v teoreticko–metodologické části jsou zpracovány ze sekundárních zdrojů, které jsou získány z odborných knih, odborných časopisů a z důvěryhodných internetových zdrojů zaměřených na gastronomii a hotelnictví. Zvláštní pozornost je věnována vývoji gastronomických služeb. Dále je pojednáno o jejich významu a trendech. Poté je stručně uvedena charakteristika sítě provozoven. Důležitou částí je popis produktu gastronomických služeb. Analytická část podává ucelený soubor informací o gastronomických službách v Praze 12. Nejdříve je stručně charakterizována vybraná lokalita. Na základě provedení vlastního šetření je sestaven přehled gastronomických zařízení. Průzkum se soustřeďuje pouze na restaurační formu stravování. Následně je použita metoda „Mystery Guest“ tzv. fiktivní host, která sleduje kvalitu poskytovaných služeb ve vybraných provozovnách. Kromě toho je pomocí dotazníkového šetření zjištěn názor veřejnosti na gastronomické služby v Praze 12. Poznatky jsou využity pro návrhovou část diplomové práce. Zde je například doporučeno ve vybrané lokalitě zahájit provoz aperitiv baru, vinárny či jídelny. V okolí řeky Vltavy je také navrhnut sezónní podnik. V závěrečné části práce je uvedeno stručné zrekapitulování a dosažené výsledky práce.

Abstract:

The main objective of the thesis is to provide the summary of the gastronomic services in the selected location (Prague 12) and highlight the level of services provided. The secondary objective of the thesis is to propose the appropriate measures for the development of these services. The information in the theoretical–methodological part are processed from secondary sources which are obtained from books, journals and the Internet trust resources specialized in gastronomy and hospitality management. Special attention is paid to the development of gastronomic services. Furthermore, it is discussed about their significance and trends. Then briefly it shows the characteristics of the network of establishments. The important part is the description of the product gastronomic services. The analytical part provides a comprehensive set of information about the gastronomic services in Prague 12. Initially, it is briefly characterized the selected location. On the basis of the implementation own investigation is compiled list of gastronomic equipment. The survey concentrates only on the restaurant form of alimentation. Then is used method „Mystery Guest“ or fictitious guest, that monitors the quaity of the services, which are provided in the selected establishment. In addition, using the questionnaire survey is found the public opinion on the gastronomic services in Prague 12. The findings are used for the design part of the Master´s Dissertation. For example is recommended in the selected location to open an aperitif bar, a wine bar and a dining room. In the vicinity of the river Vltava is also recommended a seasonal restaurant. In the final part of the work is given a brief recapitulation and overall results of the work.
