Decorative gastronomy (carving)

Abstract:

V bakalářské práci se snažím vysvětlit pojem dekorativní gastronomie neboli kuchařská a cukrářská artistika. Jedním z oborů je carving – vyřezávání ovoce a zeleniny. V teoretické části popisuji jeho dávnou historii, techniku, suroviny a jejich uchovávání a kurzy. Dále zde popisuji používané speciální nástroje, jimiž jsou drobné nožíky a dlátka různých profilů. V analytické části, se snažím porovnat soutěže a jejich hodnocení pomocí osobních rozhovorů s odborníky. Srovnávám zde národní soutěže Czech Carving Cup a Junior Carving Cup s Mistrovstvím Evropy a IKA – Kuchařskou Olympiádou. Pomocí propozic zjišťuji rozdíly v historii, organizaci, četnosti a ve způsobech hodnocení. Otázky do rozhovoru byly konzultovány s předním českým představitelem carvingu panem Luďkem Procházkou. Respondenti byli dotazováni na spokojenost s nastavením hodnotícího systému a na spokojenost s odborností komisařů. V návrhové části popisuji možný hodnotící systém, který by mohl vést k objektivizaci soutěžního hodnocení. Vycházím z hodnocení krasobruslařských závodů a navrhuji nový systém hodnocení pomocí nových tabulek.

Abstract:

In my bachelor´s dissertation I try to explain the concept of decorative gastronomy or culinary art. One of the fields is carving - fruits and vegetables carving. The theoretical part is about its long history, technique, raw materials and their storage and courses. Furthermore, I describe the use of special tools, which are small knives and chisels of various profiles. In the analytical part, I try to compare the competition and their judging system through personal interviews with experts. I compare national competitions Czech Carving Carving Cup and Junior Cup with the European Championship and IKA - Culinary Olympics. Using the propositions I find differences in the history, organization, frequency and method of evaluation. The questions in the interview were consulted with leading Czech representative carving Mr. Luďek Procházka. Respondents were asked about their satisfaction with the setting of the judging system and satisfaction with expertise of judges. In the suggestion section I describe the possible judging system, which could lead to the objectification of the competitive assessment. I come from a figure skating races and suggest new system using the new tables.
