Abstract:
V teoretické části bakalářské práce je legislativně vymezen pojem mouka, charakterizovány netradiční zdroje pro výrobu mouky: banány, dýně, réva vinná, ostropestřec mariánský a len setý. Dále je definován pojem vláknina, popsány její frakce a benefity vyplývající z konzumace vlákniny. Abstract:
In the theoretical part of the bachelor thesis the concept of flour is legislatively defined, non-traditional sources of fiber are characterised such as bananas, pumpkins, grapevine, milk thistle and flax. Furthermore, the term dietary fiber is defined, its fractions, and the benefits resulting from the consumption of fiber are described.
