Production of fruit spirits in Slovacko

Abstract:

Diplomová práce se zabývá výrobou ovocných destilátů v oblasti Slovácko. Cílem práce bylo zjistit, zda destiláty, které byly destilovány ze slazeného kvasu, budou chuťově lepší, než kvasy, které se destilovali z neslazeného kvasu. Teoretická část popisuje celý proces destilace, od historie po druhy ovoce, přípravu kvasů a samotnou destilaci. Analytická část se zabývá analýzou nejvýznamnějších pálenic v oblasti Slovácko, určuje metodu hodnocení senzorických vlastností destilátů, stanovuje kritéria degustačního a senzorického hodnocení destilátů respondenty a obsahuje rozhovory s respondenty a jejich degustační a senzorické hodnotící listy. V návrhové části jsou vyhodnocována data a podány návrhy podle výsledků vyhodnocení. Nakonec byly navrženy změny v legislativě ve vztahu k pálení mimo pěstitelské pálenice.

Abstract:

The thesis deals with the production of fruit distillates in the region of Slovacko. The aim of the study was to determine whether the distillates that have been distilled from a sweetened ferment will taste better than the distilled distillates from unsweetened ferment. The theoretical part describes the whole process of distillation, starting with the history and continuing with the types of fruits, preparation of ferments and the distillation itself. Analytical part analyzes the major distilleries in the area of Slovacko, determines the method of evaluating the sensory attributes of the spirits, sets criteria for tasting and sensory evaluation of the distillates by respondents and includes interviews with respondents and their tasting and sensory evaluation sheets. In the proposal part there is an evaluation of the data and submission of the proposals according to the evaluation results. Lastly there were the proposed changes in legislation in relation to distillation outside of the licensed distillery.
