Options for reducing the sulfur dioxide content of wine

Abstract:

Tato bakalářská práce se zabývá problematikou oxidu siřičitého ve víně a metodami k jeho snížení. Práce je zpracována metodou literární rešerše. Nejdříve je popsána problematika využití oxidu siřičitého při výrobě vína a vlastnosti, kvůli kterým je tato látka používána. V další části jsou popsány jednotlivé metody, které lze rozdělit na technologické, chemické a fyzikální. Práce se zaměřuje na fyzikální metody, které nevyžadují přidání žádných přísad do vína a moštu. Některé tyto metody ještě nejsou v praxi tolik rozšířené, i když odborné publikace se na ně soustřeďují. Výsledkem práce je zhodnocení kladů a záporů použití těchto metod v souvislosti s ekonomickou náročností. Lze konstatovat, že tyto technologie mají potenciál a v budoucnu budou čím dál více využívány a zlepšovány.

Abstract:

This bachelor thesis deals with the topic of sulfur dioxide in wine and the methods contributing to its reduction. The method of literary research is used. Firstly, it is described the use of sulfur dioxide in wine production and the properties for which this substance is used. The next part describes the individual methods, which can be divided into technological, chemical and physical. The thesis focuses mainly on physical methods that do not require the addition of any ingredients to wine and must. Some of these methods are not yet so commonly used in practice, even though there are lots of scientific studies dealing with this topic. The result of the thesis is the evaluation of the pros and cons of using these methods in connection with their economic complexity. In my opinion these technologies have the potential and they will be increasingly used and improved in the future.
