Rtuť v rybích výrobcích

Abstract:

Tato studie se zabývá výskytem rtuti v rybách a rybích produktech, konkrétně v rybích omáčkách. Přesné stanovení a kvantifikace obsahu rtuti v různých druzích potravin jsou nezbytné pro zajištění bezpečnosti potravin. Tato práce se také zabývá výskytem rtuti v ekosystémech, její bioakumulací v různých druzích ryb a možnými zdravotními důsledky pro spotřebitele. Dále popisuje specifické postupy používané při výrobě rybích omáček. Koncentrace rtuti ve vzorcích rybí omáčky byla měřena pomocí techniky atomové absorpční spektrometrie s termooxidačním rozkladem vzorku. Obsahy rtuti ve zkoumaných vzorcích rybích omáček se pohybovaly v rozmezí od 0,284 do 3,844 μg/kg. Žádná z testovaných rybích omáček nepřesáhla limit stanovený v Nařízení (ES) č. 1881/2006. Obsah rtuti v rybích omáčkách slabě koreloval s procentuálním zastoupením ryb v omáčce.

Abstract:

This study examines the occurrence of mercury in fish and seafood products, namely fish sauces. Accurate identification and quantification of mercury levels in different types of food are essential to guaranteeing food safety. This thesis also deals with the occurrence of mercury in ecosystems, its bioaccumulation in different fish species, and the potential health consequences for consumers. Furthermore, it describes the specific techniques used in the production of fish sauces. The concentration of mercury in fish sauce samples was measured using the technique of atomic absorption spectrometry with thermal oxidation degradation of the sample. The mercury contents in the tested samples of fish sauces ranged from 0,284 to 3,844 μg/kg. None of the tested fish sauces exceeded the limit specified in Regulation (EC) No 1881/2006. The mercury content in fish sauces mildly correlated with the percentage of fish in the fish sauce.
