Review of Hotel Restaurant Concept

Abstract:

Tato práce má za úkol porovnat dva úspěšné gas tronomické podniky a to zejména z hlediska organizačního a procesního. Tyto restaur ace disponují společným zázemím, což není úplně typické, avšak mají zcela rozdílné konce pty. V práci se snažíme zachytit společné rysy zejm éna, ale nejen, těchto dvou restaurací, a na základě společných charakteristik pak sestavujeme v poslední části práce určitý šablonovitý strukturovaný seznam, ve kterém jmenujeme vybrané, důležité zásady pro správný chod restaurace a uvádíme typy manažerských aktivit, kte ré bychom měli mít vyřešené, než budeme novou restauraci například otevírat. Tato práce není založena na porovnávání absolu tních poměrových ukazatelů, ale na komparaci procesních a organizačních dějů v podniku , a to například z hlediska personalistiky, produktu jako marketingového nástro je, multioborovosti odvětví atd. Jedním z nejpodstatnějších cílů této práce byl popis konceptu restaurace oceněné michelinskou hvězdou a poté popis vlivu tohoto ocen ění na organizaci jako celek. Hlavními metodami, které daly vzniknout této p ráci, byly použity zejména detailní komparace, pozorování a osobní dotazování a validac e aktuálnosti tohoto tématu. Práce je rozdělena na tři základní celky. V pr vní části jsou uvedeny základní pojmy a je zde kladen důraz na přiblížení se české gastronomie čte nářovi. Ve druhé části se již věnujeme samotným podnikům a popisujeme je ze tří časových i ntervalů: historie, přítomnost a budoucnost. V poslední části je pak již zmíněný náv rh konceptu, který obsahuje zásadní předpoklady pro fungování restauračního podniku a n abízí i řadu doporučení, která je zapotřebí mít na vědomí, když se tomuto krásnému ob oru chceme věnovat.

Abstract:

This work seeks to compare two successful gastronomic organizations, especially in terms of organization and process. These restaurants have a common background, which is not typical, but they have completely different concepts. In this work we try to capture common features including, but not limited to these two restaurants, and on the basis of common characteristics then put together in the last part a schematic structured list, which we name selected, important principles for the correct operation of restaurants and we types of management activities we have solved before we open a new restaurant for example. This work is based on a comparison of the absolute ratios, but the comparison process and organizational processes in an enterprise, for example in terms of human resources, product as a marketing tool, multioborovosti industry etc. One of the most important goals of this study was to describe the concept of Michelin-starred restaurant, and then describing the impact of the award on the organization as a whole. The main methods that have produced this work were used particularly detailed comparison, observation and personal interviews and validation of this issue. The work is divided into three parts. The first section describes the basic concepts and there is an emphasis on approaching the Czech gastronomy to readers. The second part is engaged in enterprises themselves and describe the three time intervals: history, present and future. The last part is the known design concept that includes the key prerequisites for the functioning of the restaurant business and offers a number of recommendations that need to be aware of when this beautiful field we want to pursue.
