The coffee association and its influence on the offer of coffee in gastronomy

Abstract:

Cílem této práce bylo zjistit, jak funguje Kávová asociace, jaký má vliv na nabídku kávy v gastronomii a jak se snaží pozvednout kávovou kulturu v České republice. První část této bakalářské práce je zaměřena na kávu obecně, na její historii a zpracování. Ve druhé, analytické části jsou zpracovány informace o londýnské asociaci Speciality Coffee Association of Europe, Škole kávy, baristických soutěžích a Kávové asociaci. Analytická část taktéž zkoumá fungování Kávové asociace formou rozhovorů s jejími členy. Při nich bylo zjištěno, že je její aktivita nulová a asociace funguje pouze formálně. Proto musely být původní cíle upraveny a dále bylo zkoumáno, zda existuje povědomí o Kávové asociaci, zda by byl zájem o její fungování a jaké aktivity by měla vyvíjet. Dotazovaní byli majitelé kaváren a kavárenských zařízení a studenti oboru hotelnictví středních a vysokých škol. Z dotazníkového šetření vyplynulo, že většina respondentů nezná Kávovou asociaci, ani důvod jejího založení. Dále z dotazníkového šetření vyplynulo, že by dotazovaní o její fungování stáli. Třetí, návrhová část, obsahuje nápady na aktivity, které vyplynuly z dotazníkového šetření, a které by mohly vést ke zlepšení dosavadní situace Kávové asociace.

Abstract:

The aim of this work was to find out how the Coffee association functions, what influence it has on the offer of coffee in gastronomy and how it tries to raise the coffee culture in the Czech Republic. The first part of this work is focused on coffee generally, on its history and its processing. The second analytic part deals with information on London‘s Speciality Coffee Association of Europe, Coffee School, barista competitions and Coffee Association. The analytic part also investigates on the functioning of the Coffee Association through interviews with members of this association. During these interviews I found out that this association exists only formally and that its activities are zero. For these reasons the initial aim had to be rectified to investigation whether there exists any knowledge at all of the Coffee Association, whether there would be any interest about its functioning and which kind of activities it should develop. Coffee shop owners and students of hotel schools have been questioned. Most of them did not even know about the Coffee Association or why it was founded. On the other hand they would welcome its functioning. The third part contains suggestions of those questioned which could improve present situation of the Coffee association.
