Abstract:
Práce je věnována obsahovým složkám kávy, zejména chlorogenové kyselině a jejím derivátům. Skupina chlorogenových kyselin se přirozeně vyskytuje v rostlinách. Jedná se o estery kyseliny chinové se skořicovými kyselinami. V práci bylo provedeno jejich stanovení ve vzorcích nízko pražené kávy do 120 °C. This work is dedicated to content components of coffee, mainly chlorogeinc acid and its derivatives. Natural occurrence of group of chlorogenic acids is in plants. Chemicaly, they are formed by the esterification of -(-)quinic acid with cinnamic acids. They have been determined in samples of coffee roasted up to 120 °C in this study.
