Abstract:

Tématem diplomové práce je Implementace bezlepkového stravování v české gastronomii. Vzhledem ke stále narůstající poptávce po bezlepkové stravě, ze zdravotních či jiných důvodů, je práce zaměřena na její poskytování v českých restauracích. Cílem diplomové práce je identifikovat problémy související s bezlepkovým stravováním v restauračních zařízeních z pohledu osob na bezlepkové dietě a vypracovat návrhová doporučení v této oblasti určená majitelům restaurací. Pro naplnění cíle byl proveden kvantitativní výzkum formou dotazníkového šetření určený osobám na bezlepkové dietě. Dále byl realizován kvalitativní výzkum formou semi-standardizovaných rozhovorů s majiteli restaurací. Oba výzkumy byly podkladem pro následné vypracování návrhů. Respondenti odpovídali na otázky vztahující se k nabídce bezlepkových jídel v restauracích, znalostem personálu a důvodům jejich nespokojenosti. Aktéři se vyjadřovali ke stejným okruhům. Scénář otázek se zabýval bezlepkovou nabídkou, označováním alergenů, předcházení kontaminaci s lepkem a faktory ovlivňujícími poskytování jídel bez lepku. Z výzkumů bylo zjištěno, že velká část osob na bezlepkové dietě je nespokojena s bezlepkovým stravováním a hodnotí bezlepkovou nabídku v restauracích jako nedostatečnou. Největší problémy jsou spatřovány v malé nabídce, neznalostech personálu restaurací, neochotě poskytovat jídla bez lepku a ve špatném označování alergenů. Společně se srovnáním výsledků z rozhovorů se dospělo k závěru, že v českých restauracích je potřeba zapracovat na změnách, které povedou ke zlepšení stavu bezlepkového stravování v restauračních zařízeních.

Abstract:

The topic of this master’s dessertation is the Implementation of the Gluten-Free Diet in Czech Gastronomy. Due to a constant rise of demand for gluten free meals for various reasons such as health issues, this dissertation focuses on the level of providing those meals in Czech restaurants. The aim of this dissertation is to identify all of the challenges regarding gluten free menus in Czech restaurants from the point of view of people on gluten-free diet and to devise proposals in this area created specifically for the restaurant owners. In order to meet the objectives, quantitative research was conducted in a form of a questionnaire survey designed for people on a gluten-free diet, followed by quality research which composed of several semi-standardized interviews with restaurants owners. The outcomes of both of the researches were then used as a basis to create final proposals. Respondents were answering questions related to gluten-free menus in restaurants, the level of gluten-free diet knowledge of the restaurants staff or for instance different reasons of their dissatisfaction. In more detail, some of the questions included indicating different allergens in the menus, precautions taken to prevent gluten cross-contamination and other different factors influencing providing gluten-free meals. The research revealed that a large proportion of people on gluten free diet is dissatisfied with the diversity of gluten free meals in restaurants and lack of gluten intolerance awareness and they rate it as unsatisfactory. Major issues comprised insufficient gluten-free menus, uneducated restaurant staff regarding gluten-free diet, unwillingness to offer gluten-free meals and incorrect indicating of gluten allergens in the menus. After compiling the results of the interviews, the outcome of the research came to a conclusion that it is necessary for the owners of Czech restaurants to implement fundamental changes which will then lead to enhancing the diversity of gluten-free diet in Czech restaurants.
