The effect of addition of pectins and monosaccharides on a selected charakteristics of processed cheese

Abstract:

Cílem této práce bylo zkoumat vliv různých přídavků monosacharidů (glukosy, fruktosy a galaktosy) na tvorbu gelu neesterifikovaného pektinu, který byl přidáván do modelového taveného sýra s obsahem 40% w/w sušiny a 50 % w/w tuku v sušině. V práci byly analyzovány a srovnány tyto vzorky: kontrolní vzorek, vzorky s přídavkem 0,2 nebo 0,4% w/w pektinu, vzorky s přídavkem 1% w/w monosacharidů a vzorky s přídavkem jak pektinu tak monosacharidů. Po čtrnáctidenním skladování (při 6{$\pm$}2 °C) byla u vzorků sledována konzistence pomocí dynamického oscilačního reometru s geometrií deska-deska. Bylo zjištěno, že vzorky obsahující pektin byly tužší oproti kontrolnímu vzorku. Naopak přídavek monosacharidu do taveného sýra způsobil značný pokles jak elastického (G´) tak ztrátového (G´´) modulu pružnosti, což se projevilo i v poklesu tuhosti sýra. Všechny typy monosacharidů snížily hodnoty elastického (G´) a ztrátového (G´´) modulu pružnosti na stejnou hladinu. Protože reálné vzorky vykazovaly široký rozptyl, byly v následující části vyrobeny analogy tavených sýrů. Analogy byly taveny především ze sladkého kaseinu a sójového či kokosového tuku. Cílem této části bylo najít vyhovující surovinovou skladbu analogů pro další práci.

Abstract:

The scope of this study was to investigate the influence of various solid cosolutes (glucose, fructose, galactose) on gelation of non-esterified pectin which was included in model processed cheese with 40% w/w dry matter and 50% w/w fat in dry matter. In the work, there were analyzed and compared following samples: the control samples, samples with 0,2 or 0,4% w/w of pectin, samples with 1% w/w of monosaccharide and samples with pectin and monosaccharide together. After 14 days of storage (at 6{$\pm$}2 °C), it was observed consistency of the samples using the dynamic oscillation rheometry with plate-plate geometry. In the present work was found that samples containing pectin were firmer than control samples without pectin. The monosaccharide addition caused substantial decrease in the storage (G´) and loss (G´´) moduli values, i.e. the decline in firmness of model processed cheese with monosaccharide. All these monosaccharides reduced the values of storage (G´) and loss (G´´) moduli to the same level. Results in the first part of this study weren{\crq}t exact, so it was made another part, where some cheese analogs were prepared. These analogs contained mainly from rennet casein and soya and coconut fat. The scope of this part was to find suitable composition for next study.
