Production of Biogenic Amines in Cheese

Abstract:

Cílem bakalářské práce bylo posoudit možnosti snížení obsahu biogenních aminů v sýrech za použití vybraných druhů mikroorganizmů. Pro tento účel byly vyrobeny modelové šarže sýrů typu gouda (1 šarže kontrolní, 1 šarže s producentem biogenních aminů a 2 šarže s odlišným potenciálním degradérem biogenních aminů), u kterých byl v průběhu 3 měsíčního zrání pozorován vliv použité kultury na obsah biogenních aminů. Kontrolní šarže sýrů (pouze se smetanovou kulturou) vykazovala nejnižší obsah volných aminokyselin, z nichž bylo vytvořeno malé množství biogenních aminů. Kultura s použitým producentem biogenních aminů vykazovala nejvyšší množství volných aminokyselin a také i nejvyšší obsah biogenních aminů, což od téhle šarže sýru bylo očekáváno. Šarže sýrů s potenciálními degradéry biogenních aminů také vykazovaly vysoký obsah biogenních aminů, nicméně se jednalo o nižší obsahy než u šarže pouze s producentem. Z výsledků lze usoudit, že použité kmeny v modelových vzorcích sýrů degradovaly biogenní aminy, ale v nižší intenzitě než byla očekávána.

Abstract:

The aim of this bachelor thesis was to evaluate possibilities of the reduction of biogenic amines in cheese by using the chosen kinds of microorganism. The model batches of the cheese like gouda-cheese have been made for this purpose (1 control batch, 1 batch with a producer of the biogenic amines, 2 batches with the different potential degrader of biogenic amines), where an effect of the used culture on content of biogenic amines was observed during a 3-month's ripening. The control cheese (only with mesofilic culture) evinced the lowest contest of free amino acids, of which small quantity of biogenic amines was formed. The culture with the used producer of biogenic amines showed the highest amount of the free amino acids and also the highest content of the biogenic amines, what was expected from this batch. The batches with the potential degraders of biogenic amines evinced high content of biogenic amines, but the content was lower as the content by the batches only with the producer. From the results could be concluded, that the used strains in model formulas of cheese degraded the biogenic amines, but in lower intensity than was expected.
