Terroir - finding relationships between the geomorphological conditions of the habitat and the quality of the grapes

Abstract:

Tato bakalářská práce se zaměřuje na vztah „terroir“ s révou vinnou a vliv kvality hroznů na rozdílná stanoviště. První část této práce je zaměřena na obecné informace týkající se jednotlivých půdních typů a jejich vlastností. Různé druhy terénu mají také velký vliv na dozrávající hrozny, což je ovlivněno nadmořskou výškou, sklonem terénu a ostatní vyskytující se florou. Klimatické podmínky oblastí vinných regionů také markantně ovlivňují kvalitu hroznů a tím i kvalitu vína. Tyto oblasti nejsou ovlivněny jen přírodními vlivy, ale také zde má výrazný vliv člověk. Zasahuje do krajiny a po mnoho generacích proměňuje krajinu a vinice. Velké aktuální téma ve světě jsou klimatické změny. Čím dál více se spojují s produkcí kvalitních hroznů s odkazem na terroir a není zaručena stejná charakteristika vín v budoucích letech. Praktickou část bakalářské práce je zaměřena na rozdílnost a chování jedné odrůdy Sauvignon Blanc. Spojení šesti různých tratí s rozdílným geologickým složením. Z každé jednotlivé tratě bylo vyrobeno jedno víno o minimálním objemu 20 litrů. Proces výroby probíhal v chladných prostorách, se snahou vyrobit víno stejným způsobem a myšlenkou. Stejné postupy při odkalování moštu a následně zakvášení tiolovými kvasinkami. Výpočty bioklimatických koeficientů jsem počítal, srovnával ze čtyř různých meteorologických stanic, které byly poblíž tratí, odkud hrozny pochází. Závěr je zaměřen na výsledky měření vín a při chemickém rozboru byl zkoumán rozdíl měřených hodnot ze vzorků, které následně senzoricky byly posouzeny v intenzitě vůní, chutí a celkovém dojmu.

Abstract:

This Bachelor thesis focuses on the relationship of "terroir" with vines and the influence of grape quality on different habitats. The first part of this work focuses on general information of the individual soil types and their properties. Different types of terrain also have a big impact on the ripening grapes, which is influenced by altitude, slope of terrain and other occurring flora. The climatic conditions of the wine regions also have a marked effect on the quality of the grapes and, with it, on the quality of the wine. These areas are not only influenced by natural forces, but also have a significant impact from people encroaching on the landscape and, after generations of different changes in the way vineyards are managed. The big topical issue in the world is climate change, increasingly associated with the production of quality grapes with reference to terroir, not guaranteed the same characteristics of wines in future years. I have my practical part of my bachelor's thesis focused on the diversity and behaviour of one Sauvignon Blanc variety to connect six different tracks with different geological compositions. I made each individual line one of my wines with a minimum volume of 50l. The production process took place in my premises, where I approached each wine with the same idea. The same methods for draining the must and then fermenting it with thiol yeast. I calculated and compared the results of the bioclimatic factors from four different weather stations that were near the tracks where the grapes came from. In conclusion, I focus on the results of my own wine measurements and in my chemical analysis I examine the difference of the measured values from the samples, which are subsequently and sensorially assessed in the intensity of the aromas and tastes.
