Menu Engeneering and Its Use in Gastronomy

Abstract:

Bakalářská práce s názvem Menu engineering a jeho využití v gastronomii. Tato bakalářská práce je založena na sběru a vyhodnocení dat restauračního menu v hotelové restauraci – Restaurant 1890 v NH Collection Prague Carlo IV. Hlavním cílem práce je na základě sesbíraných dat vytvořit návrhy vycházející z jejich zhodnocení metodami menu engineeringu. Dílčím cílem práce je zhodnotit menu engineering hotelové restaurace s názvem 1890 Restaurant, která je součástí hotelu NH Collection Prague Carlo IV. Data byla sbírána po dobu tří měsíců – června, července a srpna. A následně vytvořit návrhy vycházející ze zhodnocení na základě menu engineeringu. Poté menu engineering - název pokrmu, jeho rozdělení do kategorie, food cost, net amount (čistou částku bez daně, za kterou je pokrm prodáván), taxes (daň z pokrmu), prodejní cena pokrmu, počet prodaných jednotlivých pokrmů, součet cen nákladů, součet cen za počet prodaných pokrmů, product cost v %, zisk z prodeje jednotlivého druhu pokrmu a následně food menu analysis (zařazení pokrmu do jednotlivé kategorie podle bostonské matice. Závěrem této práce bylo zhodnocení menu a jeho kategorizace podle bostonské matice. Doporučení a návrh, jak by restaurace mohla díky modifikaci a upravení menu vylepšit zisky.

Abstract:

Bachelor thesis entitled Menu engineering and its use in gastronomy. This bachelor thesis is based on the collection and evaluation of restaurant menu data in the hotel restaurant - Restaurant 1890 in the NH Collection Prague Carlo IV. The main goal of the work is to create proposals based on the collected data based on thein evaluation using menu engineering methods. The partial goal of the work is to evaluace the menu engineering of the hotel restaurant called 1890 Restaurant, which is part of the NH Collection Prague Carlo IV hotel. Data was collected over free months – June, July and August. Subsequently, its menu engineering - name of the dish, its division into categories, food cost, net amount (the net amount without tax for which the dish is sold), taxes (tax on the dish), selling price of the dish, number of individual dishes sold, sum of cost prices , sum of prices for the number of dishes sold, product cost in %, profit from the sale of an individual type of dish and then food menu analysis (classification of a dish into an individual category according to the Boston matrix. The conclusion of this work was the evaluation of the menu and its categorization according to the Boston matrix. Recommendation and proposal , how the restaurant could improve profits by modifying and adjusting the menu.
