Changes in the composition of stone fruits during ripening

Abstract:

Diplomová práce byla zaměřena na hodnocení změn obsahových látek jádrového ovoce v průběhu zrání. V literární části jsou charakterizovány jednotlivé druhy jádrového ovoce, základní látkové složky jádrového ovoce a změny, které nastávají v průběhu zrání. V experimentální části jsou hodnoceny změny látkového složení dvou odrůd jablek a dvou odrůd hrušek v průběhu zrání. K pokusu byla vybrána jablka odrůdy ‘Rubinolaʼ a ‘Mitchglaʼ a hrušky evropské odrůdy ‘Konferenceʼ a asijské odrůdy ‘Yaliʼ. Změny barevnosti slupky byly hodnoceny kolorimetrem, změny pevnosti slupky a dužniny penetrometrem. Stupeň zralosti byl určen pomocí stupně indexu škrobu a celkový obsah kyselin byl analyzován alkalimetrickou titrací. Kyselina jablečná, citronová a askorbová, stejně tak jako glukóza, fruktóza a sacharóza byly hodnoceny metodou HPLC. Rozpustná sušina byla stanovena pomocí refraktometru. Hodnocení byla prováděna v týdenních intervalech v období 13. srpna až 1. října 2020.

Abstract:

This diploma thesis was focused on the evaluation of changes in the composition of stone fruits during ripening. The literature section characterizes the various types of stone fruits, the basic substance components of stone fruits, and the changes that occur during ripening. The experimental part evaluates the changes in the composition of two varieties of apples and two varieties of pears during ripening. Apples of the ‘Rubinolaʼ and ‘Mitchglaʼ varieties and pears of the European ‘Conferenceʼ variety and the Asian ‘Yaliʼ variety were selected for the experiment. Changes in the color of the peel were measured with a colorimeter, changes in the strength of the peel and flesh with a penetrometer. The degree of maturity was determined by evaluating the starch index. The total acidity was measured by alkalimetric titration. Malic, citric, and ascorbic acid as well as glucose, fructose, and sucrose were measured by HPLC. Soluble solids were assessed with a refractometer. These evaluations were conducted on a weekly basis from August 13th to October 1st, 2020.
