Comparison of Czech and Georgian wines made in clay pots

Abstract:

Tato bakalářská práce obsahuje informace o vínech vyrobených v hliněných amforách pocházejících z kolébky vinařství – Gruzie. Hliněné nádoby jsou popsány z hlediska historie, výroby, typů a velikostí, čištění a vlivu na kvalitu vína. Dále jsou v této práci sepsány gruzínské i české vinařské oblasti, vinařství vlastnící hliněné nádoby a odrůdy používané pro výrobu tohoto typu vín. Dalšími částmi literárního přehledu jsou využívané technologie výroby vín v kvevri nádobách a chemické složení těchto vín. Senzorické hodnocení a chemická analýza shromážděných 20 vzorků vín vyrobených v hliněných amforách v České republice a Gruzii jsou součástí experimentální části. Z chemické analýzy vyplývá, že parametry vín odpovídají technologii výroby. V senzorickém hodnocení byla vína celkově hodnocena jako oxidativní a rostlinná.

Abstract:

The bachelor thesis includes information about the wines made in clay pots originating from the cradle of viniculture – Georgia. The clay pots are presented in terms of history, qvevri-making, types and sizes, cleaning and influence on the wine quality. Then in this work are written down Georgian and Czech wine regions, wineries that own clay pots and grape varieties used for this type of wines. The next parts of the literary summary are using technologies for making wine in qvevries and the chemical composition of these wines. Sensory evaluation and chemical analysis of collected 20 samples of wine made in clay pots in the Czech Republic and Georgia are included in the experimental part. From chemical analysis comes that wine parameters correspond with used technology. The wines were evalutaded in sensorial evaulation like oxidative and vegetal.
