Comparison of czech brand brewery restaurants

Abstract:

Tato bakalářská práce porovnává restaurační řetězce českých pivovarů, které se rozšiřují na základě franchisingu. Jedná se o restaurační řetězce Potrefená husa, Pilsner Urquell Original Restaurant a Bernard Pub. Z každého konceptu byla vybrána jedna restaurace jako reprezentativní příklad k účelům porovnání. Jsou to restaurace Potrefená husa v Hybernské ulici, PUOR V Kolkovně a Bernard Pub v Jeseniově ulici. První (teoretická) část této práce pojednává o historii gastronomie, historii piva, franchisingu, historii porovnávaných pivovarů a historii porovnávaných značkových restaurací českých pivovarů. Cílem bakalářské práce je porovnat tyto restaurace z různých úhlů pohledu. Pomocí mystery shoppingu porovnává restaurace v oblastech odbornosti personálu, atmosféry v restauracích a kvality a ceny porovnávaných produktů. Dále díky informacím poskytnutým od manažerů restaurací porovnává restaurace v kontextu způsobu obsluhy, uniformách, způsobu motivace personálu, jídelních a nápojových lístků, denní nabídky, speciálních akcí, nejoblíbenějších pokrmů a nápojů, klientely, udržení hosta, návštěvnosti, vybavení, průměrné útraty a kontroly kvality. Hlavním výsledkem této práce je zjištění, že všechny tyto restaurace jsou na vysoké úrovni jak servisu, tak i používaných surovin, odbornosti personálu, a i všech ostatních porovnávaných oblastí. Tímto je podložena jejich oblíbenost a neustálá expanze.

Abstract:

This thesis compares restaurant chains of Czech breweries, which are expanding on the base of franchising. The given restaurant chains are Potrefená husa, Pilsner Urquell Original Restaurant and Bernard Pub. In each concept, one restaurant was selected as a representative example for the purposes of comparison. These are the restaurants Potrefená husa in Hybernská street, PUOR V Kolkovně and Bernard Pub in Jeseniova street. In the first part of this thesis, focused on the theory, discusses the history of gastronomy, history of beer, franchising, history of the compared breweries and history of the compared brand restaurants of Czech breweries. The aim of this thesis is to compare these restaurants from different angles of view. By use of mystery shopping it compares the restaurants in the areas of staff expertise, atmosphere in the restaurants and quality and prices of compared products. Furthermore, thanks to the informations given by the managers of the restaurants, it compares the restaurants in the methods of operations, uniforms, methods of motivating the staff, the food and drinks menu, daily menu, special events, the most favorite meals and beverages, clients, keeping of guests, turnout, equipment, average spending and quality control. The main result of this thesis is the finding that all of these restaurants are maintaining a high standard of service, as well as in the used materials, staff expertise and even in all other compared areas. On this is based their popularity and constant expansion.
