Analysis of linalool in beer using headspace microextraction approaches

Abstract:

Tato diplomová práce se zabývá stanovením linaloolu v pivu. Vyuţívá se zde mikroextrakčních technik v headspace uspořádání s následnou analýzou na plynovém chromatografu s plamenovým ionizačním detektorem. Teoretická část je zaměřená na výrobu piva a mikroextrakční techniky, zejména SDME a SPME. V praktické části byly tyto dvě metody optimalizovány a následně aplikovány na reálné vzorky piv. Na závěr byl porovnán obsah linaloolu v klasicky chmelených a za studena chmelených pivech.

Abstract:

This thesis deals with the determination of linalool in beer. Headspace microextraction methods were used in combination with gas chromatography and flame ionization detector. The theoretical part is focused on beer production and microextraction techniques, especially SDME and SPME. In the experimental part these two methods were optimised and then applied to the analysis of real beer samples. Finally, contents of linalool were compared for classically hopped and dry-hopped beers.
