Hazard analysis for production of mushroom food

Abstract:

Tato diplomová práce se zaměřuje na analýzu rizika pro výrobu pokrmů z hub. Teoretická část zahrnuje problematiku systému HACCP, jeho základní principy, pojmy vztahující se k HACCP, popis možných zdravotních nebezpečí z potravin a přehled postupů zavedení plného systému HACCP. Druhá část teorie se týká kodexových (tržních) hub, jednotlivých skupin těchto hub, seznamuje s přehledem způsobů použití kodexových hub v přípravě pokrmů, způsobů konzervování hub, s popisem možných znehodnocení hub a toxikologií hub. V praktické části diplomové práce je vyhotoven systém postupů založených na principech HACCP, vycházející z postupů popsaných v teoretické části. Z analýzy rizika vyplynulo celkem 13 kritických bodů pro teplé pokrmy z hub, z čehož 2 byly vybrány jako kritické kontrolní body (příjem surovin - hub, tepelná úprava houbového pokrmu). Pro studené houbové pokrmy vyplynulo z analýzy celkem 9 kritických bodů a z toho byly vybrány 2 kritické kontrolní body (příjem surovin - hub, skladování hotového výrobku). Cílem diplomové práce bylo vytvořit analýzu rizika pro výrobu houbových pokrmů v imaginární provozovně s ovládacími opatřeními ve výrobě těchto pokrmů tak, aby výroba byla bezpečná.

Abstract:

The diploma thesis focuses on the risk analysis in the production of mushroom dishes. The theoretical part of the thesis covers HACCP issues, its basic principles, concepts related to HACCP, description of the potential health risks from food and review the procedures estabilished by the complete HACCP system. The second theoretical part concerns the codex (market) mushrooms - particular groups of the fungi, introduces the overview of ways to use the codex mushrooms in cooking and preservation, by the description of the possible degradation and toxicology of fungi. The practical part of the thesis drawns up the system of the procedures based on HACCP principles deriving from procedures that are described in the theoretical part of the thesis. The risk analysis revealed a total amount of 13 critical points for hot mushroom dishes, 2 of them were selected as the critical control points, (intake of raw materials - fungi, hot mushroom dishes). For cold mushroom dishes was determined a total of 9 critical points and 2 were selected as the critical control points (intake of raw materials - fungi, storage of finished product). The aim of the thesis was to set up a risk analysis for the production of mushroom dishes in an imaginary premises with control measures in the production of the food, so that the production was safe.
