Manifestations of Digitization in Hospitality and Gastronomy in the Context of the Industry 4.0 Agenda

Abstract:

Diplomová práce se zabývá identifikací projevů digitalizace v ubytovacích a stravovacích zařízeních v kontextu 4. průmyslové revoluce. Teoretická část práce obsahuje stručnou historii průmyslových revolucí, definice a vymezení jednotlivých pojmů souvisejících s danou problematikou. Dále se uvádí digitální nástroje, které jsou popsány a vysvětleny. Analytická část se zabývá zodpovězením výzkumných otázek, naplněním cíle diplomové práce a potvrzením či vyvrácením hypotézy prostřednictvím výzkumu. Hlavním předmětem výzkumu jsou řízené rozhovory s majiteli nebo provozovateli konkrétních ubytovacích či gastronomických provozoven, kde dochází k zaznamenávání konkrétních projevů digitalizace. Řízené rozhovory jsou vedeny také s dodavateli digitálních produktů pro obor hotelnictví a gastronomie. Doplňujícím článkem výzkumu je modelová situace, kde prostřednictvím empirického pozorování a praktické zkušenosti lze porovnat plně automatizované ubytovací zařízení s klasickým hotelovým provozem. Výstupy z řízených rozhovorů jsou doplněny o statistiky a články, jež napomáhají k úplnému interpretování jednotlivých projevů digitalizace. V návrhové části práce je doporučení implementace konkrétních digitálních nástrojů do konkrétního ubytovacího zařízení. Vypovídací hodnota návrhu je zejména v kalkulaci a výpočtu návratnosti investice.

Abstract:

Master´s dissertation deals with the identification of the manifestations of digitalization in accomodation and catering facilities in the context of the 4th industrial revolution. The theoretical part of the thesis contains a brief history of the industrial revolutions, definitions of individual terms related to the issue. Furthermore, digital tools are describted and explained. The analytical part deals with answering the research questions, fulfilling the aim of the thesis and confirming or refuting the hypothesis througt research. The main object of the research is guided interviews with the owners or managers of the specific accommodation or catering establishments, where specific manifestations of digitalisation are recorded. Controlled interviews are also conducted with suppliers of digital products for the hotel and catering industry. A complementary element of the research is a model situation where throught empirical observation and practical experience, a fully automated accommodation facility can be compared with a classic hotel operation. The findings from the guided interviews are complemented by statistics and articles that help to fully interpret the different manifestations of digitalization. In the proposal part of the thesis, a recommendation is made for the implementation of specific digital tools in a specific accommodation facility. The narrative value of the proposal is mainly in the calculation and calculation of the return on investment.
