Abstract:

Norma ISO 22000 je pro podniky z oboru potravinářství užitečným nástrojem, protože umožňuje zlepšit procesy a minimalizovat riziko kontaminace produktu, čímž přispívá ke zvýšení konkurenceschopnosti v průmyslovém odvětví. Naléhavost pro získání dané certifikace pochází z externího prostředí. Analýzou dokumentů, pozorováním a aplikací modelu osm kroků změny podle Johna P. Kottera bylo zjištěno, že společnost musí provést fyzické změny ve výrobních prostorách a změny v řízení kvality jednotlivých procesů. Zjištěny byly vysoké vstupní náklady spojené s fyzickými změnami ve výrobě, ostatní náklady na změnu byly vyčísleny v zanedbatelné výši v porovnání s předpokládanými výnosy. Identifikovány byly příležitosti v oblasti řízení kvality, které díky aplikaci procesů dle normy ISO 22000, povedou ke snížení nákladů v oblasti externích reklamací, ty byly analyzovány pomocí Ishikawa diagramu a prostojů ve výrobě, na jejichž analýzu byla použita metoda ANOVA. Hlavním přínosem této práce pro malé a střední podniky jsou doporučení týkající se jednotlivých změn, která mohou využít během vlastního přechodu na jinou certifikační normu. Přínosem pro analyzovanou společnost je vypracování jednotlivých konkrétních kroků změny a dopadu změny jako celku na daný podnik. Limitem této práce je nemožnost porovnání s konkurencí, protože data o interním řízení kvality a řízení změn jsou citlivé údaje, které společnosti nechtějí zveřejňovat.

Abstract:

The ISO 22000 standard is a useful tool for companies operating in the food industry as it allows to improve processes and minimalize the risk of product contamination. It also contribute to increase competitiveness in the field of industry. The urgency to obtain this certification comes from an external environment. Due to analyzing documents, observing and applying John P. Kotter’s eight-step procces for leading change, it was determined that the analyzed company has to make physical changes in the production place and changes in the quality control of the individual processes. The high input costs associated with the physical changes were found, other costs of change were calculated at a negligible amount compared to the expected returns. The opportunities in the quality management were identified, which, thanks to the application of the processes according to the ISO 22000 standard, will lead to a reduction in the cost in the area of the external complaints, these were analyzed using the Ishikawa diagram and downtime in production, which was analysed using the ANOVA method. The main benefit of this thesis for small and medium-sized companies are the recommendations regarding the individual changes that the companies can use during their own transition to another certification standard. The main benefit for the analyzed company is the development of the individual specific steps of the change and the impact of the whole change on the analyzed company. The limit of this thesis is the impossibility of the comparsion with any competitors, because the information about the quality management and the management of changes are sensitive and the companies do not want to publish them.
